Honyaki knives are made only with steel whith by tempering. Honyaki is only a name and does not mean special true(hon) forget(yaki). High hardness steel is forged from the edge(HASAKI) up to half of the blade as forging the whole steel makes the blade brittle and aligning the curve of the blade becomes difficult. Also, the increased hardness makes sharpening them a real challenge. They are recommended for highly skilled professionals.
Due to the high purity of this steel, Honyaki will rust if not maintained properly.
